Roger Houck and his family ( Wife Melanie, and kids: Hannah, Clara, & Lydia) are from Upstate NY in the Adirondacks where Roger grew up. He decided he wanted to share his passion for fishing, hunting and the outdoors which includes taking out those who have never experienced it.

TORTURE TEST!!! Smoking Chicken in Negative 20 weather with the Pit Boss Lexington 540 Will It Work?
We are back at it on the smoker. -20 to -30 with the windchill and we are making smoked chicken with an Alabama White Sauce.
Been watching a lot of guys saying that they are either done with smoking meat for the year due to the temperature, or they are upgrading their smokers with bricks inside (to retain the heat better) or doing things like adding blankets to the smokers.
So being I thought about this issue when I purchased my smoker last year I figured it was high time I torture tested it. -17 to -25 air temperature and a -35 to -45 windchill was the perfect weather for it. Being the ice was not in great shape it was great timing.
So the big question was will it work. The answer is YES. B...

Heres a puzzlement>>>> Last year I bought a little soft GH 54" X 54" X 6.6ft tall. I erected it in Feb when it was 39F outside. IMMEDIATELY after I closed it up the inside temp jumped to 120F. THIS YEAR- I bought a 7ft X 7ft X 10ft soft GH. Here it is 1st July when the sun is out in all of its power totally closed up this bigger GH NEVER gets above 85F. Totally closed up at mid day. Usually it is in the 70's. I will admit it is cool around here like 68f to maybe 75f only. But look at what the little GH did at 39f? Most curious. The plastic skins do not seem to be much different. The summertime temps seems mostly the same. Most Curious. !

Hi there Roger, I have a question that I can't seem to find an answer to, I live in a hot & humid climate 89 to 90 plus all year round, would it be feasible to hope for it to last at least a year?, if not would it even be worth my while in time money and work?, anxiously awaiting your response, thank you GOD bless you & yours
On this video, thank you for teaching us what you have learned. This really helps me to see the importance of buying special equipment to freeze items. Because, for us, everything has gotten so expensive that we are really trying to conserve in this new economy. It's just got to be TOO EXPENSIVE for people to eat out anymore, so we are cooking at home. And, we are learning how to COPYCAT all the recipes that we like, where we can cook at home and save money.

I've never canned anything before. This sounds like a great video to start with. In the past 5 years, I've been learning to make my own venison brats, meat sticks, summer sausage, smoked fish, etc. Most everything is frozen afterwards. With this video, I will start to can meats. Also. I like your disclaimer at the end of your video. I understand the risks fully. I truly believe if done properly, these should last for a couple years. Thanks for the video!

Great video! The only concern I would have is with the cross ribs you added to the top to prevent the sagging. The idea is great but think about adding some padding to each end so when the wind blows etc the plastic won't develop a hole from the rough cut edge of the plastic rib. Unless I missed it in the video...then I apologize for not paying attention lol. I live near Malone NY, on the border of Canada, and I have one of those pop up 12x20 garages with the tubular metal frame..I have to find the right plastic to cover it but it will make an awesome greenhouse when I can get it covered. Looking forward to seeing your progress

About salt, just don’t use table salt, it has chemicals in it to keep running free. It’s also what raises your blood pressure.

A lot of people willingly denying the risk of botulism here. Pressure canning is the only proven way to consistently prevent this.
Cooking the food properly ie reheating kills any botulism ... or wait 24 hours after canning n do another 4 hour in canning pan ..

I personally would not eat straight from the jar. Botulism is rare but still a possibility. Heat destroys the toxin.
Your video reminds me of my days of filleting 1000s of fish with a fillet knife. Now 1000's of fish into filleting with an electric knife i can cut your time in half. But your doing damn good.
I wish I could water bath can everything! I’m in high elevation and even pressure canning it takes forever! There is almost always that funk canning taste in everything from pressure canning. I’m still addicted to canning, though. Now, in the crazy times more than ever.
3 hours??? After it reaches 212 degrees F it's not getting any hotter, after twenty or thirty minutes there can't be any living pathogens in the jar to worry about.
Just pressure can it... why take the risk?
Raised my kids on canned venison and beef. Used a water bath canner cause that's all I had. For meat add tsp of salt per qt, don't add water, meat cooks up it's own broth. Made sure the water level was kept up and let it can for 3 hrs. Lived on canned garden foods and meats for years.
